In Season Two Ep One, Jason lies to Sookie about where he is going on his spiritual camp.

But… how could he lie? Sookie reads minds. Couldn’t Sookie just read Jason’s mind and know that he’s lying to her and what his real plans are?

Yeah, but Jason knows that Sookie tries to stay out of the minds of her loved ones. She doesn’t have any reason to think that he’s lying, so why would she bother listening in? If it had been one of those moments where she slipped up and read his thoughts without intending to, yeah, he would have been boned, but she normally stays out unless she has to.
